Spaghetti Pie
6 oz drained spaghetti
2 tbsp olive oil or butter
2 eggs, well beaten
3/4 cup shredded parmesan
1 cup ricotta cheese
1 cup spaghetti sauce prepared with or without meat
1/2 cup shredded mozzarella cheese
Preheat oven to 350. Lightly grease 10 inch pie plate. Toss hot spaghetti with olive oil or butter. Combine eggs and 1/2 cup parmesan cheese. Stir into spaghetti. Pour spaghetti into prepared plate. Form into "crust." Spread ricotta cheese over crust. Top with spaghetti sauce. Bake uncovered for 25 minutes. Top with mozzarella cheese. Bake 5 minutes more or until cheese is melted. Sprinkle with remaining 1/4 cup Parmesan cheese. Cool 10 minutes. Cut into wedges.

1 (8 ounce) container frozen whipped topping, thawed
1 (8 ounce) can fruit cocktail, drained
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
3 cups miniature marshmallows)
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
In a large bowl, combine the whipped topping, fruit cocktail, pineapple, mandarin oranges, marshmallows, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.
Had to put this on the blog so mom could read it, make adjustments, and make it for the elders since she won't be able to find her cookbook. ;O)

Hey...I found the cookbook! But about that ambrosia salad...wasn't a teaspoon of the ground nutmeg a bit much? Usually a recipe that has a teaspoon of cinnamon, will only use about 1/8tsp to 1/4tsp nutmeg ???? How was it? MOM
